It was started by Scott and Andrea Robbins; Scott serves as head cheesemaker and Andrea manages the retail side. The team makes cheese four days a week, turning and tending the wheels by hand in the early stages. The shop's own site lists fresh cheese, aged cheddar, quark and pimento cheese, and a clothbound cheddar is also mentioned. Visitors can buy at the shop, which is open on limited days.

Holmes County Baby Swiss

Holmes County is Ohio's Swiss cheese heartland. Guggisberg Cheese, founded in 1950 by Swiss immigrants Alfred and Margaret Guggisberg, pioneered Baby Swiss there in the 1960s.

Baby Swiss is a Swiss-style cheese developed there. The area once supported 40 to 50 cheese makers and still has a handful, drawing milk from nearby farms, many of them Amish.
